Roasted Edamame with Poha The Ultimate High Protein Indian Breakfast

Poha—a beloved staple across Indian households—is celebrated for being light, digestively friendly, and quick to prepare. Made from flattened rice, onion, mustard seeds, turmeric, and peanuts, a standard bowl of poha is a wonderful source of quick carbohydrates. However, if your target is a balanced meal that supports muscle repair, weight management, or sustained morning energy, traditional poha can leave a gap in your daily protein intake.
Enter roasted edamame.
By pairing the light texture of poha with the crunchy, plant-derived protein of roasted soybeans, you turn a traditional carb-heavy breakfast into a high-protein power meal.
Why Boost Your Poha with Roasted Edamame?
-
Complete Plant Protein: Edamame contains all nine essential amino acids, making it a rare complete plant protein source.
-
Sustained Energy & Satiety: Adding protein and fiber to flattened rice lowers the overall glycemic load of the meal, preventing sudden blood sugar spikes and mid-morning energy crashes.
-
Effortless Texture & Flavor: Crunchy, nutty roasted edamame adds a rich bite that complements soft flattened rice without extra cooking time.
Easy High-Protein Edamame Poha Recipe
Ingredients:
-
1.5 cups Thick Poha (flattened rice)

½ cup Roasted Edamame (Plain or Salted)
-
1 medium Onion (finely chopped)
-
1 small Potato (optional, finely diced)
-
1–2 Green Chilies (chopped)
-
½ tsp Mustard seeds (rai)
-
8–10 Curry leaves
-
½ tsp Turmeric powder
-
1 tbsp Oil or Ghee
-
Salt to taste
-
Fresh Lemon juice & chopped Coriander for garnish
Step-by-Step Instructions:
-
Rinse the Poha: Place the flattened rice in a colander and rinse gently under cold water for 30–40 seconds. Drain completely and set aside for 5 minutes to soften.
-
Prepare the Tempering: Heat oil or ghee in a pan over medium heat. Add mustard seeds and allow them to crackle. Add curry leaves and green chilies.
-
Sauté the Vegetables: Add the chopped onions (and diced potatoes, if using). Cook until the onions turn soft and translucent.
-
Season: Reduce heat to low. Stir in the turmeric powder and salt.
-
Combine: Add the softened poha and toss gently to distribute the yellow turmeric evenly. Cover with a lid and steam on low heat for 2 minutes.
-
Add the Edamame Crunch: Turn off the heat. Stir in the roasted edamame right before serving to preserve its distinct crunch.
-
Garnish & Serve: Finish with a squeeze of fresh lemon juice and chopped coriander.
